Ingredients
- 1 ½ cups unsalted raw cashews
- 3 Medjool dates, pitted
- 5 tablespoons squeezed lemon juice
- 1 tablespoon maple syrup
- ½ cup water
- 1.5 teaspoons vanilla
- ½ teaspoon almond extract
Instructions
- Soak the cashews and dates for 30 minutes in filtered water (use the same bowl).
- Drain soaking water.
- Place all the ingredients in a high-speed blender and blend on high.
- Add a tablespoon of water at a time if it’s difficult to blend. Scrape sides of blender as needed.
- Blend until creamy and smooth.
- Refrigerate to cool.
- Serve with any fruit you like.
Notes
It’s especially great drizzled on sliced bananas with walnuts and cinnamon.
Store in refrigerator for up to three days.
Add lemon zest for a more lemony flavor.
