This recipe is why I never get bored with meal prep. With leftover chili, chipotle sauce, and sweet potatoes, you’ve got vegan loaded sweet potato fries in 20 minutes. It's one of those non-dairy appetizers I rely on for get-togethers, hearty weeknight dinners, or game-day comfort food.
It’s the fastest way to turn simple leftovers into something that feels brand new—much like leftover vegan meatloaf with lentils, which easily turns into a delicious sandwich the next day!
Why This Recipe Works
- Super easy meal prep leftovers! Turn your batch-cooked chili into something completely new!
- Air fryer sweet potato wedges get crispy outside and fluffy inside in just 15 minutes!
- Super customizable! Load them up with whatever you love! Use my easy vegan chili or my 3-bean chili recipe. Use creamy chipotle sauce, my vegan nacho cheese sauce, or a smoky charred salsa for another dipping sauce idea.
- Delicious and indulgent with healthy nutrients!
Ingredients & Substitutions
Here's what you'll need to make this vegan loaded chili sweet potato fries recipe:

Loaded fries are flexible! Use what you’ve got — that’s the beauty of a good chili base.
- One-Pot Vegan Chili, but it works with any chili, like 3-bean chili, white bean chili, or store-bought.
- Sweet Potatoes cut into wedges. I like peels left on, but you can peel them if you like.
- Creamy Chipotle Sauce for drizzling. I often alternate with my vegan nacho cheese sauce recipe and a side of vegan lime crema. SO good!
- Avocados – 1–2 ripe ones, sliced fresh when you're ready to serve them
- Fresh Jalapeños or my canning pickled jalapenos and carrots, whatever you prefer
See the recipe card for exact quantities.
Potato Wedges Options
- Classic wedges – cut into thick wedges, air fry until crispy
- Regular potato wedges – use my Air-Fried Yukon Gold Potato Wedges if you prefer
- Mixed potato wedges – half sweet potato, half white potatoes for variety
- Store-bought frozen – Just follow the package instructions

In the Kitchen Tips
- Sweet potato prep: Cut peeled or unpeeled wedges evenly so they cook at the same rate — about ½-inch thick works perfectly.
- Warm your chili: Cold chili on hot fries doesn’t work as well. I like to warm it first.
- Fresh avocado: Slice right before serving to prevent browning.
- Sauces: Drizzle sauces after plating so the wedges stay crispy longer.
- Serving: Serve on a large plate, platter, a cast iron skillet, or a baking sheet with parchment paper, depending on the occasion.
Make it Your Way
- Sauce swaps: Try vegan sour cream, sriracha mayo, vegan nacho cheese, or top it with easy homemade guacamole or a simple pico de gallo recipe.
- Less spicy: Skip the jalapeños, chipotle sauce, and try using vegan sour cream instead.
- Protein boost: Add a dollop of this healthy hummus recipe, vegan Italian sausage crumbles recipe, or a sprinkle of hemp seeds.

This is one of those healthy dinner recipes I always come back to. And it doubles as one of my favorite quick vegan lunch recipes the next day.
Storage
- Leftover loaded fries: Best eaten fresh, but the components store well separately.
- Sweet potato wedges: Store in fridge for 2–3 days, reheat in air fryer for crispness
- Chili: Keeps for 4 days in the fridge
- Sauces: Most homemade sauces keep 3–4 days refrigerated
More Ways to Use Your Meal Prep Chili
This is just one of the methods I use to mix and match chili. Try these ideas:
- Chili Mac — Mix with cooked pasta and layer with Instant Pot vegan cheese sauce.
- Breakfast Hash — Over roasted potatoes with avocado
- Chili Quinoa Bowl — Spoon chili over quinoa, add avocado and lime for a protein-packed meal prep option.
- Chili Quesadillas — Between tortillas and a layer of vegan spreadable provolone cheese

- fresh cilantro or parsley, for serving, chopped
- fresh jalapeños, for serving, OR pickled jalapeños
- Vegan Lime Crema, for serving, drizzled over
- 1-2 ripe avocados, for serving, sliced
Instructions
- Make the Sweet Potato Wedges: Make 1 batch of Air-Fryer Sweet Potato Wedges.
- Warm the Chili: Heat your pre-made chili in a pot over medium heat until warmed through.
- Assemble: On a large plate or platter, layer the fries and top with warm chili, then drizzle with chipotle sauce.
- Add Toppings & Serve: Top with avocado, green onions, cilantro (or parsley), jalapeños, and any other desired toppings. Enjoy while the wedges are still crispy!

- Serve on a large plate, platter, cast-iron skillet, or baking sheet with parchment paper.
- Crispy wedges: Don't overcrowd the air fryer basket - cook in batches if needed.
- Sauce storage: All the sauces mentioned keep well in the fridge and can be made ahead.
- Fresh toppings ideas: Also try fresh diced tomatoes or cherry tomatoes, radishes, or diced red onions.
- Oven method: Roast wedges at 425°F for 25–30 minutes (check at 25) or until crispy if no air fryer.
- Spicy: Add quick pickled jalapeños, a dash of sriracha or hot sauce, or chile de arbol salsa (if you like it bold and hot!).
