This healthy vegan fruit dip is creamy, sweet, dairy-free, and ready in 5 minutes. Serve it with fresh fruit for an easy snack, fruit platter, party dip, or make-ahead treat.
2Medjool datespitted (or 2 tablespoons maple syrup)
½tablespoonmaple syrup
¾teaspoonvanilla extract
¼teaspoonalmond extractoptional

Instructions
Add the cashews, water, lemon juice, dates, maple syrup, vanilla extract, almond extract, and salt to a high-speed blender. If you’re not using a high-speed blender, soak the cashews first. See notes.
Blend until completely smooth and creamy, stopping to scrape down the sides as needed.
If the dip is too thick, add a small splash of water and blend again.
Taste and adjust as needed. Add a little more maple syrup for sweetness or lemon juice for brightness.
Serve right away with fresh fruit, or chill for 20–30 minutes for a thicker dip.
Notes
Soaking cashews: If you’re not using a high-speed blender, soak the cashews in hot water for 20–30 minutes first, then drain and rinse. This helps the dip blend smoother.
Maple-only fruit dip: Skip the dates and use 2–3 tablespoons maple syrup instead. Start with less water so the dip stays thick.
For an orange vanilla fruit dip, use fresh orange juice instead of lemon juice. Start with the same amount and add more to taste if needed.
