This iced strawberry matcha latte is made with a lightly textured strawberry layer, creamy oat milk, and whisked matcha for a beautiful café-style drink you can make at home with simple ingredients.
¾cupfresh ripe strawberrieshulled and quartered, OR frozen strawberries, thawed completely
5teaspoonspure maple syrupadjust to preference
1pinch offine sea salt
⅛teaspoonvanilla extract
1 ½teaspoonsmatcha powder
¼cuphot waternot boiling
1cupunsweetened oat milk
ice cubesenough to fill each glass about ¾ full
Instructions
Add strawberries, maple syrup, salt, and vanilla to a blender. Pulse until the strawberries are broken down but still textured. Do not blend until smooth (unless you prefer). You can also use a muddler for a chunkier strawberry layer.
Divide the strawberry mixture between the bottom of two clear glasses.
Sift the matcha powder into a small bowl. Add the water and whisk until smooth and lightly frothy. A bamboo whisk or handheld milk frother both work well.
Fill each glass ¾ full with ice. Slowly pour ½ cup of oat milk into each glass directly over the ice cubes to keep the layers separate.
Gently pour half of the whisked matcha over the top of each glass to finish the layered look.

Notes
Don't use boiling water for the matcha. Boiling water can make matcha taste bitter.
Frozen berries option: Let them thaw completely on the counter before pulsing. If they're still frozen, they won't pulse as easily and will leave you with icy clumps instead of a textured, spoonable base.
Oat milk gives this drink a creamy café-style texture. Cashew milk and soy milk are great options too, while coconut milk adds a subtle tropical flavor.
Milder matcha: If you prefer a milder matcha flavor, use 1 teaspoon matcha instead of 1½ teaspoons.
Prefer a smoother strawberry texture? Press the blended strawberries through a fine-mesh sieve before assembling the drinks.
Optional toppings: Fresh strawberry slices, a light dusting of matcha, or crushed freeze-dried strawberries.
