While I love a pretty café-style drink, I like making them at home even more. You get to decide how sweet they are, how bold the matcha tastes, and exactly what goes in it, like in these creamy aguas frescas recipes.

I've been drinking and making different matcha recipes for years, and pairing it with strawberries is one of my favorite combos. The strawberries soften the matcha just enough without covering it up. Matcha has a deep, earthy umami flavor, and the acidity in strawberries cuts through perfectly without needing a ton of sweetener.

This iced strawberry matcha latte recipe has a textured strawberry layer on the bottom, creamy oat milk in the middle, and whisked matcha poured over the top. It’s beautiful before you stir it and even better once the layers come together.

  • Balanced sweetness: The matcha layer stays completely unsweetened, while the strawberry blend carries the sweetness. This keeps the drink balanced instead of overly sweet.

One thing recipe testing has taught me is that café-style drinks are usually much simpler than they look. Once you learn a few simple basics, it's easy to make everything from this strawberry matcha beverage to this creamy homemade horchata.

Ingredients & Substitutions

Here's what you'll need to make this strawberry matcha drink:

  • Strawberries: Fresh or frozen strawberries both work.
  • Maple Syrup: I love maple here, but agave works well too.
  • Matcha Powder: Use a good-quality matcha powder you enjoy drinking. Culinary or ceremonial matcha both work. Culinary gives a bolder latte-style flavor, while ceremonial is usually smoother and more delicate.
  • Oat Milk: Cashew milk is another great option, and soy milk works well too. Coconut milk is another delicious plant-based milk if you want the drink to lean a little tropical. Almond and rice milk can be used, but they’re thinner and won’t make the latte quite as creamy.

I can never resist tweaking my recipes. There's always something new to try! Sometimes it's making it bolder or creamier, like when I add a splash or two of oat milk to my pineapple peel tea.

How to Make a Strawberry Matcha Latte

Here's how to make this iced strawberry matcha drink:

  1. Step 1: Lightly pulse the berries, maple syrup, salt, and vanilla in a blender just until broken down but still textured.

  1. Step 4: Whisk the matcha with hot (not boiling) water, then slowly pour it over the top. Stir before drinking.

Fresh strawberries are so good in season, but you don't have to wait for summer to make this. I also use frozen strawberries, because they're picked at peak ripeness, and I always have a bag in my freezer. Just let them thaw first so they blend easily.

Tested Tips

  • Use hot, not boiling, water. Water that's too hot can make matcha taste bitter. Let freshly boiled water cool for a few minutes before whisking, or use water between 160°F and 175°F for the best flavor.
  • Use the ice to build the layers. The ice slows down the milk and matcha as you pour, which helps create the strawberry, milk, and matcha layers.
  • The strawberry layer should taste a little sweeter and more concentrated than you want the final drink to taste. Once everything is added, it softens.

One of my favorite things about homemade drinks is how easy they are to customize. Some days I make the matcha a little stronger, and other times I like a little more maple in the strawberries. My iced green tea lemonade is just as easy to adjust.

Make It Your Way: Customizations & Toppings

This strawberry matcha beverage is flexible, but I suggest making it as written the first time. Once you know how the strawberry, milk, and matcha balance each other, it’s easy to adjust.

  • For a sweeter drink: Add another ½ to 1 teaspoon maple syrup to the strawberry mixture. For less sweetness, start with 4 teaspoons maple syrup, especially if your strawberries are naturally sweet.
  • For a bolder matcha flavor: Use 2 teaspoons of matcha. For a milder matcha, use 1 teaspoon matcha instead.
  • Serve your strawberry matcha drink with fresh strawberry slices, a sprinkle of matcha powder, or a dollop of dairy-free whipped cream for a café-style finish.

People often ask if they need ceremonial-grade matcha for lattes. You can use it, but you don't have to. A good-quality culinary matcha works here and is also great for my vegan matcha cookies and chocolate matcha protein shake.

Serve It With

Iced Strawberry Matcha Latte

Ingredients
  

  • ¾ cup fresh ripe strawberries, hulled and quartered, OR frozen strawberries, thawed completely
  • 5 teaspoons pure maple syrup, adjust to preference
  • 1 pinch of fine sea salt
  • ⅛ teaspoon vanilla extract
  • 1 ½ teaspoons matcha powder
  • ¼ cup hot water, not boiling
  • 1 cup unsweetened oat milk
  • ice cubes, enough to fill each glass about ¾ full

Instructions
 

  • Add strawberries, maple syrup, salt, and vanilla to a blender. Pulse until the strawberries are broken down but still textured. Do not blend until smooth (unless you prefer). You can also use a muddler for a chunkier strawberry layer.
  • Divide the strawberry mixture between the bottom of two clear glasses.
  • Sift the matcha powder into a small bowl. Add the water and whisk until smooth and lightly frothy. A bamboo whisk or handheld milk frother both work well.
  • Fill each glass ¾ full with ice. Slowly pour ½ cup of oat milk into each glass directly over the ice cubes to keep the layers separate.
  • Gently pour half of the whisked matcha over the top of each glass to finish the layered look.
  • Stir before drinking (see Notes for topping ideas).

  • Don't use boiling water for the matcha. Boiling water can make matcha taste bitter.
  • Frozen berries option: Let them thaw completely on the counter before pulsing. If they're still frozen, they won't pulse as easily and will leave you with icy clumps instead of a textured, spoonable base.
  • Oat milk gives this drink a creamy café-style texture. Cashew milk and soy milk are great options too, while coconut milk adds a subtle tropical flavor.
  • Milder matcha: If you prefer a milder matcha flavor, use 1 teaspoon matcha instead of 1½ teaspoons.
  • Prefer a smoother strawberry texture? Press the blended strawberries through a fine-mesh sieve before assembling the drinks.
  • Optional toppings: Fresh strawberry slices, a light dusting of matcha, or crushed freeze-dried strawberries.
