Growing up, mashed potatoes were always a comfort food I looked forward to. I could’ve happily eaten them every day, and honestly, not much has changed. 

Over the years, I’ve adapted my recipes to fit a healthier lifestyle, often making them without oil or butter for everyday meals. But when it comes to special occasions like holidays, I love to add vegan butter for extra indulgent creaminess.

These mashed potatoes, paired perfectly with vegan gravy, a hearty lentil loaf, and Instant Pot vegan mac and cheese are a staple at family gatherings.

Inspired by the longevity diets of the Blue Zones, where plant-based foods play a significant role, this recipe is a perfect balance of health and tradition.

It’s about finding that balance between nourishing your body and satisfying your soul. Made with simple ingredients, they’re a delicious, healthier take on a classic favorite. 

In this post, I’ll share with you how to make these creamy, dreamy vegan mashed potatoes, and these are your perfect plant-based option.

In the kitchen tips

  1. Yellow potatoes are great for their creamy texture and nutritional value. Keeping the skins on for everyday meals adds extra fiber and nutrients.
  2. Start with hand-mashing, then switch to a mixer for creaminess. Stop as soon as you reach your desired texture to prevent gumminess.
  3. Roasting garlic until it’s soft and caramelized enhances the flavor. Adjust the amount based on your taste preference — more for a stronger garlic flavor, less for a more subtle flavor.
  4. Use warmed plant-based milk to blend smoothly with the potatoes and maintain their heat.
  5. Do a final taste test and adjust the seasoning with salt and pepper before serving.
  6. Carefully watch the texture while mashing. Overmixing can make the potatoes gummy. For the best texture, mix until they’re just smooth and creamy. Adjust the amount of milk to your preference — less for firmer potatoes, more for creamier ones

Vegan Mashed Potatoes Recipe: Easy, Creamy, Delicious

Ingredients
  

  • 3 lbs yellow potatoes, scrubbed, quartered uniformly, and peeled if preferred
  • ⅓ cup olive oil or vegan butter
  • ¾ cup unsweetened warmed plant-based milk
  • 1-2 heads roasted garlic, to taste
  • 20 turns pepper
  • 1-¼ teaspoon sea salt, or to taste
  • Fresh herbs like chives or parsley for garnish, optional

Instructions
 

  • Roast the Garlic (Optional): Preheat your oven to 400°F (200°C). Peel the outer layers off the garlic bulb, leaving the skins of individual cloves intact. Cut the tops off the cloves, drizzle with olive oil, sprinkle with salt, wrap in foil, and roast for 30–40 minutes until soft.
  • While the garlic is roasting, place scrubbed (and peeled if preferred) and quartered potatoes in a large pot. Cover with water, bring to a boil, then lower to a simmer. Cook until tender, about 20 minutes.
  • Drain the potatoes and return them to the pot or transfer them to a mixing bowl or stand mixer.
  • Squeeze the roasted garlic out of the skins and add to the potatoes. Add the olive oil or vegan butter.
  • Begin by mashing the potatoes and garlic together with a potato masher. This method is ideal for breaking down the potatoes and incorporating the garlic, giving you more control over the texture.
  • After the initial mashing, switch to an electric or stand mixer for a smoother consistency. Start on a low setting to blend everything evenly.
  • Gradually add in the warmed plant-based milk while mixing. Pour in small amounts at a time, allowing the milk to incorporate fully before adding more. This step is key to reaching a creamy consistency.
  • Occasionally, pause to scrape down the sides of the bowl. This ensures that all parts of the mixture are evenly mashed and no lumps remain.
  • Season with salt, pepper, and mix well, and adjust to your taste.
  • If desired, garnish with fresh herbs before serving.
