One thing I love about this gravy is how easily it adapts to different meals. For a heartier version, I add sautéed mushrooms and garlic, which gives it an even deeper savory flavor.

For everyday meals, I usually use olive or avocado oil. During the holidays, I reach for vegan butter for a richer, more traditional gravy, especially when I’m serving it with my vegan cheesy hash brown casserole, milk-free mashed potatoes, or lentil loaf.

Both versions are simple, flavorful, and easy to make with ingredients I usually have on hand.

Why This Recipe Works

  • A simple roux gives it body. Cooking flour with vegan butter or oil creates a smooth base that thickens evenly.
  • Tamari deepens the savory flavor. It adds color, richness, and depth.
  • Sage and thyme complement holiday foods. Both herbs pair naturally with mashed potatoes, stuffing, lentil loaf, and roasted vegetables.
  • The flavor is easy to adjust. Broth and bouillon vary, so you can fine-tune the salt, herbs, and thickness at the end.

My cashew gravy is another favorite, with a rich cashew base that works well with mashed potatoes, roasted vegetables, grain bowls, and more.

Ingredients & Substitutions

Here are the key ingredients you'll need to make this homemade vegan gravy.

  • Vegan butter or oil: I like Earth Balance vegan butter for a richer, more traditional flavor. Avocado oil is mild and neutral. Olive oil works too, although its flavor may come through slightly more.
  • All-purpose flour: Flour combines with the fat to form the roux that thickens the gravy. Spoon it into the measuring cup and level it rather than packing it down.
  • Vegetable broth: I prefer water mixed with Not-Chick'n Bouillon, but a flavorful vegetable broth also works well.
  • Tamari: Soy sauce also works, but taste before adding extra salt.
  • Sage and thyme: Classic gravy herbs. If your broth is already strongly seasoned, start with slightly less and adjust after simmering.

Optional Mushroom Gravy Variation

Mushrooms aren't necessary, but they make an excellent variation.

  • Heat one tablespoon of vegan butter or oil in the saucepan. Add sliced or finely chopped mushrooms and cook until they release their moisture and begin to brown.
  • Add minced garlic during the final 30–60 seconds. Transfer the mushrooms to a plate, then make the gravy in the same pan. Stir the mushrooms and garlic back in just before serving.
  • Use about 4 ounces of mushrooms for a lighter variation or up to 8 ounces when you want the mushrooms to be more prominent. The important part is letting them brown. If the pan is crowded or the heat is too low, they will steam instead and will not develop the same concentrated flavor.

Tested Tips

  • Cook the flour for one minute. This removes its raw taste without turning the roux noticeably dark.
  • Add the broth in stages. Whisk in a small splash first. Once that mixture is completely smooth, gradually add the rest.
  • Whisk around the edges of the pan. Flour often collects near the sides and can create small lumps if it is not incorporated.
  • Keep the gravy at a gentle simmer. High heat can make it thicken too quickly or catch on the bottom.
  • Wait before adjusting the consistency. The gravy thickens as it simmers and will thicken a little more as it cools.
  • Taste before adding salt. Broth, bouillon, tamari, and vegan butter can all contribute salt.

How to Make Vegan Gravy

Step 1: Whisk the flour into the melted vegan butter or oil and cook for about 1 minute.

Step 2: Gradually whisk in the vegetable broth until smooth.

Step 3: Add the tamari, nutritional yeast, maple syrup, garlic powder, onion powder, sage, thyme, and black pepper.

Step 4: Simmer until thickened, then stir in the sautéed mushrooms and garlic, if using.

For the ultimate comfort-food meal, pair vegan mashed potatoes and this gravy with baked vegan mac and cheese or Instant Pot vegan mac and cheese.

Troubleshooting

  • Too thick: Whisk in broth or water, 1 tablespoon at a time, until it reaches the consistency you want.
  • Too thin: Simmer for another minute or two. If needed, whisk 1 teaspoon flour with 1 tablespoon cool broth, slowly whisk it into the gravy, and simmer for another 2–3 minutes.
  • Lumpy: Whisk vigorously, use an immersion blender briefly, or strain through a fine-mesh sieve.
  • Tastes flat: Add a little salt or tamari. A pinch of black pepper or up to ¼ teaspoon balsamic vinegar can add more depth.
  • Too salty: Whisk in unsalted broth or water, then simmer briefly if the gravy becomes too thin.

Make It a Meal

For a classic holiday dinner, serve this gravy with creamy vegan mashed potatoes, lentil quinoa meatloaf, and one-pot stuffing, which are great for leftovers too.

For an everyday easy comfort-food bowl, layer milk free mashed potatoes with tofu sausage crumbles and roasted cabbage steaks, then spoon warm gravy over the top.

This simple gravy also pairs really well with cauliflower and broccoli baked potatoes.

Storage & Make-Ahead

  • Refrigerate: Let the gravy cool and store it in an airtight container for up to 4 days.
  • Reheat: Warm it gently in a saucepan over low to medium-low heat, whisking often. Add broth or water as needed to loosen the texture.
  • Make ahead: Prepare the gravy 1–2 days before serving. It will thicken in the refrigerator, so plan to add a splash of liquid when reheating.
  • Freeze: Freeze in a freezer-safe container for up to 2 months. Leave a little space at the top for expansion.
  • After freezing: Thaw overnight in the refrigerator and reheat slowly while whisking. The texture may look separated at first but should smooth out as it warms.

Ingredients
  

  • 2 tablespoon olive oil or vegan butter, plus an additional 1 tablespoon if sautéing mushrooms and garlic
  • ¼ cup all-purpose flour
  • 2 cups vegetable broth, or 2 cups water with 1 vegan bouillon cube
  • 2 cloves garlic, minced
  • 3 mushrooms, sliced
  • ¼ teaspoon sage
  • ½ teaspoon thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon nutritional yeast
  • ½ teaspoon maple syrup
  • ½ tablespoon Tamari, or soy sauce
  • Freshly ground pepper, about 20 turns
  • Sautéed diced mushrooms, and chopped garlic (optional)
  • Fresh chopped parsley to garnish, optional
  • A splash of balsamic vinegar for an added depth of flavor, optional

Instructions
 

  • Sauté Mushrooms & Garlic (Optional): Heat 1 tablespoon olive oil or vegan butter in a pan over medium heat. Add the sliced mushrooms and sauté until golden. Add minced garlic and sauté for another 1-2 minutes, then remove from the pan and set aside.
  • Make the Gravy: In the same pan, heat the remaining 2 tablespoons olive oil (or vegan butter, or avocado oil) over medium-high heat. Whisk in the flour, stirring continuously to create a roux (a thickening base for the gravy). Gradually whisk in the vegetable broth (or the water and bouillon cube mixture) to avoid lumps.
  • Add Seasonings: Stir in the tamari (or soy sauce), maple syrup, nutritional yeast, sage, thyme, garlic powder, and onion powder. Let the gravy simmer, stirring occasionally, until it thickens and just begins to bubble.
  • Add Sautéed Mushrooms (Optional): If you made the sautéed mushrooms and garlic in Step 1, add them back into the gravy. Stir to combine and heat through.
  • Finish & Serve: Season with freshly ground pepper and garnish with fresh parsley (optional). Serve hot over mashed potatoes, this vegan meatloaf recipe, or any of your favorite dishes.
