Cactus Smoothie

Have you tried eating cactus, also known as nopales? I remember back when I learned they were edible — all I could picture were thorns.

But I grew up in the midwest and wasn’t familiar with cactus. And I’m happy I learned.

The cactus paddles are delicious served many ways — in tacos, sauteed with red chile, grilled, juiced, and in many smoothies.

And the small, pink prickly pears are a perfect sweet treat. And a study has even shown they’re effective in reducing hangovers.

Cactus is full of nutrients used in traditional and folk medicine. They’re loaded with vitamins, minerals, and antioxidants. And also may help regulate blood sugar levels.
