Growing up, I loved eating broccoli smothered in cheese.

So when I switched my diet to more plant-based, I knew I needed to find another way to enjoy this yummy combination. There are substitutions for almost everything when trying to include more plant-based foods, and this is one of my favorites.

Ingredients

  • 4 baked potatoes
  • 2 cups chopped cauliflower
  • 2 cups chopped broccoli
  • Cheesy sauce

Instructions

  1. While the potatoes are baking, prepare the cheesy sauce.
  2. Steam cauliflower and broccoli.
  3. Top potatoes with cauliflower, broccoli, and sauce.
  4. Enjoy!

  • Sub with any veggies of your choice
