Recreate This Delicious Horchata in Your Kitchen

Experience the enchanting flavors of homemade horchata with this delicious and nourishing recipe. This dairy-free, refreshing beverage is a true summer sensation. Crafted with a blend of creamy cashews, aromatic cinnamon, and natural sweetness from Medjool dates, horchata will transport your taste buds to pure delight.

Ingredients

Instructions

  1. Soak your cashews and rice in a bowl filled with enough filtered water to cover by a couple of inches. You want to soak everything so it’s soft enough to blend. Overnight works well, but at least 4 hours.
  2. If you don’t have a high-speed blender, soak your dates too.
  3. Once the cashews and rice are finished soaking, drain the soaking water. Rinse.
  4. Place the rice, cashews, and pitted dates in the blender with the filtered water– use about 3/4 of the eight cups of water at this point, depending on the size of your blender.
  5. Blend for 1–2 minutes. Test for sweetness. Add a touch of maple syrup if it’s not quite as sweet as you want.
  6. Strain the contents from the blender through the nut bag into the large bowl.
  7. Squeeze out the liquid into the bowl.
  8. Add the remaining filtered water, cinnamon, vanilla, and almond extract.
  9. Whisk to combine.
  10. Serve over ice.

Notes

  1. Chill in the fridge for flavors to combine. But if you’re anything like me and have a hard time waiting, add the horchata to a cup of ice and enjoy!
  2. Store the horchata in an airtight container in the refrigerator. It keeps for 2–3 days.
