Instructions
- Add all ingredients, except salt, to a medium saucepan and cover with at least an inch of water.
- Bring to a boil.
- Reduce heat and simmer until tender.
- Drain most of the water.
- Let sit for 5 –10 minutes — it will be hot.
- Add ingredients to blender.
- Pulse.
- Add and adjust salt for taste.
- Pour into a bowl and serve.
Notes
- 1/4 cup chopped onion and cilantro are excellent options stirred in at the end.
