  1. (Optional) For Sautéed Mushrooms and Garlic: Heat 1 tablespoon oil or vegan butter in a saucepan over medium heat. Sauté them until golden, remove from pan and set aside.
  2. In the same medium-sized pan, heat 2 tablespoons of vegan butter, olive oil, or avocado oil over medium-high heat. Whisk in the flour, stirring continuously until well combined to create a roux.
  3. Gradually whisk in the vegetable broth (or water and bouillon mixture) to avoid lumps. Stir in the Tamari (or soy sauce), maple syrup, nutritional yeast, sage, thyme, garlic powder, and onion powder.
  4. If using the sautéed mushroom and garlic mixture, add it back into the saucepan as the gravy starts to thicken. Continue to whisk the gravy until it just reaches a boil.
  5. Garnish with freshly ground pepper and freshly chopped parsley.
  6. Serve the hot gravy over mashed potatoes, vegan lentil loaf, or any of your favorite vegan dishes.
