This easy 5-ingredient cashew sour cream recipe is also highly adaptable.

Try a dollop on soup, chili, baked potatoes, sweet potatoes, tacos, burrito bowls, enchiladas, roasted veggies, beans — or any dish that calls for sour cream.

Made with just a few simple ingredients, this recipe comes together quick, especially if you’ve already presoaked your cashews.

I often have a bowl of cashews soaking in our kitchen for one thing or another. We also love eating creamy cashew fruit dip. It’s actually kind of amazing.

Easy 5-Ingredient Cashew Sour Cream Recipe

A delicious plant-based alternative to sour cream. This cashew sour cream is easy, creamy, tangy, and tasty. And, it's good for you!

Ingredients

  • 1 cup raw cashews
  • 1/2 cup of water
  • 2 Tbsp fresh squeezed lemon juice
  • 1/2 tsp sea salt
  • Any additional add-ins (see below)

Instructions

  1. Soak cashews in water for 4 hours or overnight.
  2. Drain and rinse.
  3. Add all the ingredients to a high-speed blender or food processor.
  4. Blend until smooth and creamy. You might have to stop in between to scrape down the sides of the blender. Or try adding a teaspoon of water at a time if it needs a little help along the way.
  5. Adjust for taste.

Notes

  • Adjust more or less water for a thicker or thinner consistency.
  • This cashew sour cream will thicken in the refrigerator. I like to let it cool for an hour before serving, but it’s not necessary.
  • Use a high-speed blender to get the cashews smooth and creamy. Alternatively, you can soak the cashews overnight if your blender is less powerful.
  • Store in an airtight container for up to 5 days. 
  • You can also freeze cashew sour cream. 
  • Soaking time: 4 hours
  • Yields: 1–1/4 cup
  • Prep time: 5 minutes


Additional add-ins

Add herbs and spices to compliment the style of the food you’re making. Experiment by mixing and matching for more depth and delicious flavors.

Spices: garlic powder, onion powder, smoked or sweet paprika, turmeric, cumin, chipotle powder, taco seasoning

Herbs: dill, chives, parsley, cilantro, basil, thyme, rosemary, etc. If using fresh herbs, start with 1–2 Tbsp; you can always add more. If using dried, 1–2 teaspoons to start.
