In my early twenties, I wasn’t much of a cook.

But, my easy-peasy Taco Dip—loaded with sour cream, taco meat, and a generous heaping of cheese was my signature dish at potlucks. I loved that I always went home with an empty dish.

In those days, I still hadn’t realized the impact of food choices. I ate what I enjoyed without giving too much thought beyond that. Though, eventually I started learning about nutrition and the role it plays within our mind and body.

And once I had that information, it was hard to ignore.

So my journey into healthier eating began. The transformation was gradual yet profound. I read everything I could get my hands on, and I immersed myself in the world of nutrition.

I started reinventing whole-food and plant-based versions of my favorites. Each experiment was an opportunity to blend delicious flavors with wellness.

It was a learning experience I’ll be forever grateful for.

You don’t have to be a chef or endless hours simmering sauces to make healthier food choices.

Adding in or swapping out foods is an easy way to build momentum and create positive habits within our food choices.

Little daily wins add up without much sacrifice.

It’s Not About Being Perfect

Eating healthy isn’t all or nothing. When we become too rigid with our choices, it’s often difficult to sustain. We risk losing the joy of eating. It's the shades of gray, the small, conscious decisions, that pave the path to our well-being.

And our bodies don’t require perfection to thrive.

Swapping Foods, Without the Sacrifice

When I first started swapping out foods, I was concerned about what I’d be losing. I love enjoying a delicious meal — and I wasn’t willing to give that up.

It’s surprising though, when we start eating healthier, our preferences and taste change.

As the ingredients on my plate began to change, so did my cravings. A world of new flavors unveiled itself, and I found that health and taste can complement one another beautifully.

An Upgrade With Flexibility

We have options. How much time do we have, and how much of that do we want to spend cooking? Meals can be as elaborate or simple as we choose.

For my reinvented Taco Dip, I swapped refried beans for taco meat and it became plant-based comfort food at its best

Depending on my available time, I can purchase most of these items premade or make them myself. I do love making authentic fresh guacamole for this recipe though, it’s delicious and comes together quickly.

I usually have homemade refried beans and salsa on hand; they’re staples in my weekly meal plan. It’s easy, mostly hands-off, and worth it to me. Though, when life is busy, I purchase refried beans and salsa.

Both work perfectly fine.

Preparation
  1. Gather all ingredients.
  2. If using canned refried beans, mix in a 1/4 cup of water to soften. I like to warm them in a pan for easier spreading, though it’s optional. Or prepare homemade refried beans.
  3. Prepare guacamole if making homemade.
  4. Prepare pico de gallo if making homemade.
  5. Dice optional ingredients if using.
Assembly
  1. Use a serving dish of your choice. A pie dish, bowl, or baking dish works well.
  2. First, spread the beans to the edges.
  3. Repeat with a layer of guacamole on the beans.
  4. Repeat with a layer of salsa on top of the guacamole.
  5. Top with the lettuce.
  6. Layer the pico de Gallo, black olives, green onion, and cilantro.
  7. Serve with homemade or store-bought corn tortilla chips.

Notes

  • Best if served right away but can be covered and refrigerated for a day or two.
  • Prep Time: 15-20 minutes if using pre-made ingredients. Add an additional 10-15 minutes if you're making guacamole or pico de gallo from scratch.

Start Simple, It’s a Work in Progress

  • Include a fresh fruit or vegetable with each meal.

  • Add one plant-based item or meal per day. It could be breakfast, lunch, dinner, or snack. Everything counts — the options are endless.

  • If you eat meat with every meal, try without. Spaghetti for dinner? Skip the meat and serve a delicious marinara.

  • Be forgiving and flexible

Little By Little

Eating healthier doesn’t have to happen overnight. It’s important to remember it’s not all or nothing. I’ve found being too rigid often brings the exact opposite of balance into my life.

By embracing whole foods and diverse flavors, we're not just feeding our bodies; we're nourishing our souls. Simple choices, like adding in or swapping out ingredients are powerful steps in contributing to our holistic well-being.

Start small, little by little. It’s a perfect way to contribute to your overall health.
