  2. Mix dry ingredients: In a medium bowl, combine 1 cup + 1 tablespoon (110g) oat flour, 3/4 cup (110g) all-purpose flour, 1/2 teaspoon (3g) baking soda, and 1/4 teaspoon (2g) salt. Set aside.
  3. Melt butter: Gently melt 1/3 cup (75g) vegan butter.
  4. Whisk butter and sugar: In a separate medium bowl, whisk the melted butter and 1/2 cup (110g) brown sugar for 2–3 minutes until smooth, glossy, and slightly thickened.
  5. Add remaining wet ingredients to butter and sugar: Whisk in 2 tbsp (30g) maple syrup, 1 tsp (4.2g) vanilla, and 2 tbsp (30g) plant-based milk.
  6. Combine and fold in chips: Gradually stir the dry ingredients into the wet until just combined. Fold in 1/3 cup (65g) vegan chocolate chips. Be careful not to overmix.
  7. Chill dough: Refrigerate for at least 30 minutes to 24 hours. If chilled over an hour, let the dough sit at room temperature for 5–10 minutes or until it’s soft enough to scoop.
  8. Shape the cookies: Scoop 2 tablespoons (57g) of dough per cookie and place them on the sheet, leaving 2 inches between each. Bake for 10–11 minutes (depending on your oven), rotating halfway if needed, until the edges are slightly firm. The centers will still look soft when you take them out—but they’ll firm up as they cool.
  9. Cool on the baking sheet: Let cookies cool on the sheet for 10 minutes before transferring to a rack to finish cooling.
