This easy black bean and corn salsa dip recipe works just as well for a quick lunch as it does for a party. It’s fresh, smoky, and hearty enough to spoon over rice, tuck into tacos and bowls, or scoop it up with tortilla chips. Ready in 15 minutes.

Serve this corn and black bean salsa with my cilantro lime rice, spoon it over crispy potato tacos, or add it to an easy Mexican rice bowl for a quick plant-based meal.

I make restaurant-style pico de gallo and this easy cowboy caviar dip all the time, and this salsa started with that same fresh tomato, onion, chile, cilantro, and lime idea. But once you add black beans and plenty of fire-roasted corn, it becomes something completely different.

That’s probably my favorite thing about it. Make it a salad, a dip, a bowl filling, or simply salsa; it really just depends on what sounds good in the moment.

Another one of my favorite plant based dips is this pinto bean salad with corn. It’s always a crowd-pleaser and comes together fast.

Why This Recipe Works

  • Fire-roasted corn adds instant depth. I use frozen fire-roasted corn because you get slightly smoky, browned kernels without having to roast fresh corn first.
  • Plenty of fresh lime keeps it bright. A full ¼ cup balances the sweet corn and creamy black beans.
  • A simple vinaigrette is enough. Lime juice, olive oil, and salt coat everything without covering up the fresh vegetables.
  • Fresh jalapeño brings chile flavor. Jalapeños vary quite a bit in heat, so taste yours and add serrano if you want a spicier salsa.

This simple black bean and corn salsa is delicious year-round, much like my black bean and corn pasta salad. It's crowd-pleasing game day food and great for holiday parties. In the summer, bring it to BBQs, picnics, potlucks, and summer holiday gatherings.

Ingredients & Substitutions

Here’s what you’ll need to make black bean and corn dip:

  • Fire-roasted corn: Regular frozen corn works. For more roasted flavor, brown it briefly in a hot skillet before adding it, or use fire-roasted frozen corn. Fresh corn: You can use cooked corn cut from the cob when it’s in season. Canned corn: Drain it really well. It works, although the texture will be softer and you’ll lose some of the smoky flavor.
  • Black beans: Pinto beans can work in a pinch, but black beans are my first choice here.
  • Fresh tomatoes: Roma tomatoes work especially well because they’re less watery. Grape or cherry tomatoes can also be used; quarter them first.
  • White or red onion: Either works.
  • Jalapeño: Use serrano for more heat. If you want a milder salsa, remove the inner membrane before chopping.

Another favorite salsa I love serving alongside this is my mango avocado salsa. It’s just as fresh and easy, but the sweet mango and creamy avocado make it feel completely different.

Tested Tips

  • Drain everything well. Wet beans and tomatoes can leave you with salsa sitting in a puddle of diluted lime juice.
  • Don't skip the resting time. Even 10–15 minutes gives the salt and lime time to pull the flavors together.
  • Taste your jalapeño. I've had jalapeños with plenty of heat and others that tasted almost like bell peppers. Adjust from there instead of assuming one pepper will always give you the same result.
  • Chop the onion fairly small. You want a little in each scoop, not large raw-onion bites.

If you end up with extra jalapeños, my taqueria-style pickled jalapeños and carrots are one of my favorite ways to use them.

How to Serve Black Bean and Salsa Dip

This salsa goes well with most of my vegan Mexican recipes, but here are a few of my favorite ways:

  • Alongside wet vegan burritos and burrito bowls
  • Over baked potatoes or sweet potatoes
  • Top off nachos in a bowl or tuck into vegan quesadillas
  • Lettuce wraps

Make it a Meal

Yes, you can absolutely put a bowl of this out with tortilla chips and call it a day. But don't stop there.

I especially like it spooned over cilantro lime rice or simple Mexican rice for a quick lunch or burrito bowl. Add cashew lime crema or burrito bowl sauce if you want something creamy on top.

You can also serve it alongside bean and rice tacos, crispy bean taquitos, or pile it onto air fryer sweet potato wedges with creamy vegan chipotle sauce.

Want to Make It Oil-Free?

Leave out the olive oil and make the salsa with the lime juice and salt as written.

After it rests, taste it. If it needs a little more moisture or brightness, add another squeeze of fresh lime.

Storage & Meal Prep

  • Refrigerate: It's best the same day, but it can be stored in an airtight container in the refrigerator for up to 3–4 days.
  • Before serving: Give it a good stir and taste again. A fresh squeeze of lime can wake everything back up.
  • Meal prep: Add it to rice or grain bowls with tofu, avocado, greens, or roasted vegetables for an easy lunch.

Corn and Black Bean Salsa FAQs

Is corn and black bean salsa the same as cowboy caviar?

They're similar, but not the same. This salsa is corn-forward and made with black beans, tomatoes, chile, cilantro, and a simple lime vinaigrette.
Cowboy Caviar is a heartier marinated dip or salad that usually includes additional beans and vegetables and a more complex dressing.

Is black bean and corn salsa dip spicy?

That depends heavily on your jalapeño. For less heat, remove the seeds and membrane. For more heat, leave some membrane attached or add finely chopped serrano.

How do you keep black bean and corn dip from getting watery?

Drain the beans thoroughly and avoid adding excess liquid from the tomatoes or thawed corn. If your tomatoes are especially juicy, let the diced tomatoes drain briefly before mixing everything.

Black Bean and Corn Salsa Dip

Ingredients
  

  • 2 cups frozen fire-roasted corn
  • 1 (15-ounce) can black beans, drained
  • 2 medium ripe Roma tomatoes, diced
  • 1 small onion, red or white, about ½–¾ cup, finely diced
  • 1 fresh jalapeño, finely minced
  • 1 small clove garlic, finely minced
  • ½ bunch cilantro, tender stems and leaves chopped
  • 3 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt, or to taste

Instructions
 

  • Add the frozen corn and black beans to a colander. Rinse under cool water until the corn is thawed, then drain well.
  • Add the corn, black beans, tomatoes, onion, jalapeño, garlic, and cilantro to a large bowl.
  • Whisk together the lime juice, olive oil, and salt.
  • Pour the vinaigrette over the salsa and gently toss to combine.
  • Serve right away or let sit for 10–15 minutes for the flavors to meld. Taste and adjust the salt, lime, or heat before serving.

Notes

  • Drain well: Excess moisture from the beans or corn can dilute the lime vinaigrette.
  • Corn options: Regular frozen corn works too, but fire-roasted adds more smoky flavor. You can also use well-drained canned or fresh cooked corn.
  • To char regular frozen corn: Add it to a hot, dry skillet in a single layer and cook for 5–7 minutes, stirring only occasionally, until you get browned spots. Let it cool slightly before adding it to the salsa.
  • Adjust the heat: Taste your jalapeño first. Some have plenty of heat, while others basically taste like bell peppers. Add serrano if you want more heat. Remove the membrane for less heat. 
  • More even heat: Add ⅛ teaspoon cayenne to the lime vinaigrette for gentle heat throughout. For more spice, increase to ¼ teaspoon.
  • Adjust to taste: If you like a brighter salsa, add up to 1 tablespoon more lime juice. Taste again and adjust the salt as needed.
  • Oil-free: Omit the olive oil and adjust the lime juice to taste after the salsa rests.
  • Let it rest: The salsa is good right away, but 10–15 minutes gives the lime and salt time to season everything and brings the flavors together.
