As someone who has meal-prepped plant-based Mexican dishes for years, some version of this Mexican rice bowl is always in my kitchen. Over time, I’ve learned keeping prepped grains, proteins, and fresh salsas on hand is the ultimate secret to avoiding weeknight dinner burnout.

I absolutely love burrito bowl meal prep because everything is so easy to mix, match, and customize.

Everything comes together fast, especially when a few components are prepped ahead, like the salsa. While store-bought salsa works in a pinch, I love mixing it up with homemade options like creamy chile de arbol salsa, creamy avocado salsa, or creamy jalapeno sauce.

Here’s what you’ll need to make this healthy Chipotle bowl.

  • Rice: I use my cilantro lime rice recipe, simple Mexican rice for tacos, Mexican rice with vegetables, or brown rice in a rice cooker. If you're short on time, use premade rice.
  • Black beans: 3 cans of beans or refried black beans, or Instant Pot refried beans. Leave them whole or lightly mash them.
  • Corn pico: I usually add charred corn to my pico de gallo recipe and squeeze in a little extra lime for the bowl.
  • Guacamole: homemade guacamole or sliced avocado both work wonderfully.
  • Salsa: My quick creamy chile de arbol avocado salsa (included in the recipe card below). You could also swap creamy avocado salsa, charred tomato salsa, creamy jalapeno sauce, or store-bought salsa.

How to Make a Mexican Rice Bowl

  1. Step 1: Divide the warm cilantro lime rice between serving bowls to create the base.

  1. Step 3: Spoon or drizzle the creamy chile de árbol avocado salsa over the bowls. Top with fresh cilantro, lime wedges, and vegan lime crema if using. Serve right away while everything is fresh and flavorful.

Tested Tips

  • Use shortcuts when you need them. To make this a really easy burrito bowl recipe, use store-bought salsa, guacamole, or even premade rice if you're short on time. The bowl will still be delicious.
  • Season canned beans before serving. A squeeze of lime, a little salt, and a splash of jalapeño brine can make canned beans taste much more flavorful.
  • Prep components ahead of time. Rice, beans, salsa, and pico de gallo can all be made ahead, making it easy to throw together quick lunches and dinners throughout the week.

Make It Your Way: Customizations & Toppings

The best part about a DIY Chipotle bowl is making it your own. Here are some delicious ways to upgrade your bowl:

  • Add veggies: Sauté some fajita-style bell peppers and onions. For extra nutrients, add sautéed zucchini, cauliflower, or broccoli.
  • Boost the protein: Add in extra protein like sriracha tofu, crispy baked tofu, or seasoned tofu taco crumbles
  • Fun textures: Add shredded lettuce, a quick lime-drenched crunchy cabbage slaw, quick pickled jalapeños and carrots or vegan nacho cheese
  • The drizzle: cashew sour cream or vegan lime crema

Storage & Meal Prep

  • To Store: For the best texture, store the components separately in airtight containers in the refrigerator, especially the fresh pico de gallo and guacamole.
  • For Meal Prep: You can layer the rice, beans, and sturdier veggies together in your meal prep containers to reheat later. Keep your cold toppings (salsa, sour cream) separate and add them right before eating. I like to make fresh guacamole or sliced avocado when serving.

Ingredients
  

For the Bowls

  • 3 cups cilantro lime rice, or rice cooker brown rice
  • 3 cans of beans, or refried black beans vegan or Instant Pot pinto beans
  • 1 batch guacamole
  • 1 batch pico de gallo

Quick Creamy Chile de Árbol Avocado Salsa

  • 2-3 Roma tomatoes
  • 1 jalapeño
  • 2 cloves of garlic
  • ⅓ cup cashews
  • 1 dried chile de árbol
  • 1 avocado
  • 1½ teaspoons salt
  • ⅛-1/4 cup pickled jalapeños
  • 2 tablespoons jalapeño brine
  • ¾ cup reserved cooking water
  • 2 tablespoons oat milk

For serving

  • vegan lime crema, or vegan sour cream
  • fresh cilantro
  • lime wedges

Instructions
 

  • Prepare the rice and beans (if not already made), along with guacamole.
  • To make the salsa, boil the tomatoes, jalapeño, garlic, cashews, and chile de árbol until softened. Use a slotted spoon to move the boiled ingredients to a blender. Measure out ¾ cup of the cooking water, then discard the rest. Add the remaining salsa ingredients and blend until smooth and creamy.
  • If using canned beans, drain and rinse them first. Serve them at room temp or heat them until warm. Once warm, toss the beans with the juice of 1 lime, 1 teaspoon salt (or to taste), and 2 tablespoons jalapeño brine for extra flavor.
  • Layer the bowl with beans, rice, pico de gallo, guacamole, salsa, and any additional fresh toppings you like.
  • Finish with lime crema, fresh cilantro, and lime wedges before serving.

Notes

  • To make a quick corn pico, stir in about 1 cup of frozen corn (I like charred) and squeeze in a little extra lime juice/salt if needed.
  • I usually make black beans or Instant Pot refried beans, and either leave them whole or lightly mash them. If in a hurry, canned work great too.
  • Add shredded cabbage, quick pickled jalapeños, or tortilla chips for extra texture and flavor.
  • For meal prep, store the components separately and assemble fresh when ready to eat.
  • Tip: If you are making the rice and beans entirely from scratch today, expect a total kitchen time closer to 1 hour, though mostly hands-off.
