I’ve been making taco bars for years; my kids grew up eating this way. I usually keep them pretty simple, but you can make the spread as big as you want. Once everything is set out, it looks like a feast, but most of it can be made ahead, and the toppings only need to be spooned into bowls.
Whatever you're planning, I'll show you what to put on a taco bar, how much food to make, and what you can prepare ahead so you're not chopping cilantro while everyone else is arriving.
What Should You Put on a Taco Bar?
For most gatherings, you really only need:
- Corn and flour tortillas, plus tostada shells if you want a crunchy option
- 1–2 hearty fillings
- One rice
- 5–7 toppings
- Guacamole or another creamy topping
- 1–2 salsas
- Tortilla chips on the side
You can also set out bowls so guests can use the same ingredients to make a build-your-own burrito bowl instead of tacos. Once everything is set out, even a simple taco bar looks like a feast.
Best Taco Bar Fillings
This is where I would keep things especially simple. One main taco filling plus beans is usually more than enough, but refried beans can also be the main filling. These tacos with refried beans are a good example.



Best Taco Bar Toppings
This is the fun part. I like having a mix of fresh, creamy, crunchy, and spicy toppings, but again, you don't need all of these.



I also like to put out lettuce, limed-drenched cabbage, charred corn, cilantro, lime, onions, and radishes.
Best Taco Bar Sauces and Salsas
There are so many good salsa options, but for an actual party I would probably choose one fresh salsa, one cooked salsa, and one creamy sauce.
That's enough variety without making six different things.

You definitely don't need three side dishes if the taco bar itself is loaded.
Choose one rice and maybe one snacky side.






My Easy Taco Bar Menu
This is my go-to taco bar:
- Tortillas: corn tortillas, flour tortillas, or tostada shells
- Taco Fillings: tofu taco crumbles, Instant Pot refried beans, or refried black beans
- Rice: cilantro lime rice
- Toppings: lettuce, pico de gallo, corn, fresh guacamole, jalapeños, cilantro, lime
- Sauces: nacho cheese sauce + creamy jalapeño sauce and chile de arbol salsa
- Side: tortilla chips with black bean and corn salsa dip
How Much Taco Bar Food Per Person?
I usually plan on about 3 small tacos per person.
As a starting point, allow roughly:
- ⅓–½ cup taco filling
- ¼–⅓ cup beans
- ⅓–½ cup cooked rice
- 2–3 tablespoons salsa
- 2–3 tablespoons guacamole
I also like to keep a few extra tortillas on hand, especially if tacos are the main meal or I'm feeding bigger appetites.
For the fresh toppings, I don't measure quite as closely. I put out good-size bowls of lettuce, pico, corn, cilantro, jalapeños, and lime and refill them if needed.
What Can I Make Ahead?
This is one of the reasons taco bars work so well for parties.

Taco Bar FAQs
Keep the taco filling, beans, and rice covered and warm until serving. A slow cooker, covered pot, rice cooker, or Instant Pot Keep Warm setting can help depending on what you're serving.
Wrap the warm tortillas in a clean kitchen towel and place them in a covered basket or insulated tortilla warmer. Keep the container closed between servings so the tortillas stay soft.
Make it right before serving. Press plastic wrap directly onto the surface until the first guest arrives.
For a DIY taco bar, arrange your table intentionally to keep the line moving. Start with plates and napkins, followed by tortillas and the hot fillings like rice, beans, and tofu crumbles. Add the cold toppings and shredded greens, followed by salsas, guacamole, and sauces. Keep the chips and extras at the end.

If you’re not sure where to start, I’d make the tofu taco crumbles or refried beans, cilantro lime rice, guacamole, and a good salsa.
