I’ve been making different versions of nachos for more than 20 years. Sometimes I pile them so high the chips can barely hold everything. That’s when I double up on the layers, so there are plenty of chips underneath the toppings.
If I’m short on time, I skip the cheese sauce and use store-bought vegan cheese. You can also make the cheese sauce ahead, or start it in the Instant Pot and prep everything else while it cooks.

Ingredients & Substitutions
Here are the ingredients you'll need to make this loaded vegan nachos recipe:

- Black beans: Refried or whole pinto beans work too. You can also use black bean and corn salsa or pinto bean and corn salad.
- Pico de gallo: This is the one ingredient I recommend making right before serving.
- Vegan nacho cheese sauce: Store-bought vegan cheese also works, or leave it off and use a creamy salsa, like creamy avocado tomato salsa or burrito bowl sauce.
- Salsa: I used chile de árbol salsa and made it milder with 10 chiles. Use your preferred heat level. You could also use charred tomato salsa, creamy tomatillo salsa, creamy jalapeño sauce, sriracha, taco sauce, or another favorite.

Why This Recipe Works
- The toppings balance each other. Creamy cheese sauce and guacamole meet the fresh pico and chile de árbol salsa, so the platter has richness, brightness, and heat in the same bite.
- The beans make the chips satisfying without a separate meat substitute. A little lime and salt give canned black beans enough flavor to work as the hearty base.
How to Make Easy Vegan Loaded Nachos

- Step 1: Make the vegan cheese sauce first. While it cooks prepare the seasoned beans, pico de gallo, salsa, and guacamole (if using).

- Step 2: Spread the chips in a single layer on your platter or comal. If you’re loading them heavily, add a second layer of chips so they can hold more toppings.

- Step 3: Scatter the black beans over the chips, then add pico de gallo. Drizzle with vegan cheese sauce and salsa, and finish with a couple of dollops of guacamole. Serve right away, as the soften the chips as it sits.
Tested Tips
- Make the pico fresh for serving. You can make the cheese sauce and chile de árbol salsa ahead, but prepare the pico right before assembling the nachos.
- You don’t need every topping. The cheese sauce already adds creaminess, so guacamole is optional. Sometimes I add one; other times I skip both. Load the nachos with the toppings you love.
Make It Your Way
- Add more protein: Add tofu taco meat or tofu sausage crumbles to make the nachos heartier.
- Change the base: Serve the toppings over homemade cilantro lime rice, tostadas, or lettuce.
- Potato Nachos: Try air-fryer potato wedges or halved medium Yukon Gold potatoes, steamed in an Instant Pot for 6 minutes and air-fried for 5-6 minutes. Mash a little and pile the toppings on.
- Change the beans: Try pinto beans, black bean and corn salsa, pinto bean and corn salsa, or cowboy caviar salsa.

Make a Sheet-Pan Platter
The platter shown serves 3-4. For about 6-8 servings, use a regular large baking sheet, two cans of black beans, and enough chips for two layers.
One batch each of pico, guacamole, salsa, and cheese sauce is enough to top the larger pan. With the smaller platter, you’ll have extra toppings to serve alongside. For the best texture, assemble the nachos right before serving.
Storage & Meal Prep
Nachos are best assembled just before serving. To make ahead, make the cheese sauce and salsas in advance, and season the beans with lime and salt. Keep the toppings separate in the fridge, then assemble when you’re ready to serve.
With the smaller platter, you’ll have extra toppings. Serve them alongside the nachos, or use them the next day over rice for an easy bowl. Extra cheese sauce is good for dipping chips, and the chile de árbol salsa freezes well.

- ½ fresh lime, or to taste

Instructions
- Season the black beans with lime juice and salt to taste.
- Arrange the tortilla chips in one layer on a serving platter or comal. For heavily loaded nachos, add a second layer of chips.
- Scatter the beans over the chips. Top with pico de gallo, then drizzle with cheese sauce and chile de árbol salsa. Add guacamole, if desired.
