- 2 tablespoons unsweetened plant-based milk, soy, oat, etc.
- ½ teaspoon pure vanilla extract
- 1 tablespoon chopped walnuts, optional
Instructions
- Grease a mug or ramekin with a bit of oil or cooking spray.
- Combine the all-purpose flour, baking powder, sugar, pumpkin spice mix, cinnamon, and a pinch of salt in the mug or ramekin.
- Add the pumpkin puree, oil, milk, and vanilla extract to the dry ingredients in the mug.
