I’ve made a lot of air fryer tofu over the years, and this one never disappoints. If you've ever wondered how to cook tofu without oil, this is my favorite way.
The maple sriracha sauce gives a sweet-heat balance, but it’s the tahini that makes it special. It coats the tofu just enough so the sauce sticks, caramelizes, and still gets those crispy edges that make air fryer tofu so good.
This sweet and spicy maple tofu works just as well in a bowl, tucked into tacos, or eaten straight off the tray (which happens way more than I’d like to admit).

Why This Recipe Works
- The tahini sauce clings to the tofu and caramelizes in the air fryer. That’s what gives you sticky, crispy edges without deep frying.
- The maple helps the tofu brown and get those sticky edges, while the sriracha brings heat without overpowering the sauce.
- Cornstarch creates the crisp. Just a small amount gives the outside a light, crunchy coating while keeping the inside tender.

- Extra‑firm tofu: I use pre-pressed tofu. If you’re using regular extra‑firm tofu, press out as much water as possible first.
- Tahini: Use a smooth, well‑stirred tahini so the sauce blends evenly. You can substitute a neutral oil, but it will lose a little creaminess.
- Maple syrup: Adds sweetness and helps the tofu caramelize.
- Sriracha: Adjust to taste depending on how spicy you like it.
- Tamari or soy sauce works too.

Tested Tips
- Use pre-pressed tofu to save time. If you’re using extra-firm, press it well and pat it dry. Dry tofu means a crispier texture.
- If your tahini is thick, loosen it slightly (especially if toward the end of the jar). A teaspoon or two of warm water helps the sauce coat evenly instead of clumping.
- This recipe works better when you cook the whole batch at once. Because the sauce has maple in it, a few tofu cubes can burn fast. A fuller basket slows things down and gives you sticky, caramelized edges instead of scorched spots.
- If your air fryer runs hot, lower the temp slightly. Every air fryer is a little different. If yours browns too quickly, dropping the temp by 10–20 degrees helps the sauce set without burning.

Pressed tofu is the biggest secret. Use pre-pressed or press extra-firm tofu and pat it very dry before tossing it in the sauce. A small amount of cornstarch also helps create that light, crispy coating on the outside while keeping the inside tender.
The most common mistakes are starting with wet tofu, cooking at too high a temperature, and not preheating the air fryer. Wet tofu steams instead of crisps, sugary sauces can burn if the heat is too high, and not preheating can make it soggy.
Absolutely. Sriracha adds heat, tang, and just a little sweetness that pairs really well with tofu. When combined with maple syrup and tahini, it creates a balanced sweet-spicy glaze that caramelizes beautifully in the air fryer.

- 1 tablespoon maple syrup
- 1 tablespoon tahini
- 1 tablespoon sriracha
- 1 tablespoon tamari

Instructions
- Cut pressed tofu into evenly sized 1-inch blocks.
- Preheat your air fryer to 400°F.
- In a large bowl, whisk together maple syrup, tahini, sriracha, tamari, and rice vinegar.
- Gently incorporate tofu into the mixture to coat.
- In a small bowl, mix cornstarch, salt, garlic powder, and smoked paprika until smooth.
- Sprinkle over tofu and gently toss until evenly coated.

- Use pre-pressed tofu if you can. It saves time and gives the best texture. If you don't have it, wrap extra-firm tofu in a clean towel, place something heavy on top, and let it press 15-30 minutes. The drier the tofu, the crispier it gets.
- Loosen thick tahini. If your tahini is stiff (especially near the bottom of the jar), whisk in 1-2 teaspoons warm water so the sauce coats evenly instead of clumping. You want glossy, not pasty.
- Oil option: If you don’t have tahini, use 1 tablespoon neutral oil. If using sesame oil, stick to 1–2 teaspoons; it’s very flavorful and a little goes a long way.
- Cook the full batch at once. Because the sauce has maple in it, small batches can burn fast. A fuller basket helps the glaze caramelize instead of scorching.
