A nourishing, plant-based noodle soup. Packed with protein-rich chickpeas and an array of spices, it's the perfect way to ignite your day and nourish your soul.

Ingredients

Instructions

  1. Chop the onion, carrot, and celery into small pieces to ensure minimal cooking time.
  2. Add 1 tablespoon water or oil, diced onion, carrot, and celery to the pot, and sauté for 5 minutes on medium-low to sweat the veggies. Add additional water, 1 tablespoon at a time to prevent the vegetables from becoming dry.
  3. Add 7 cups of water and 2 vegan bouillon cubes to the pot. Alternatively, use 7 cups of vegetable stock or broth instead.
  4. Add in cayenne, thyme, garlic powder, onion powder, and paprika.
  5. Add 1 can of drained chickpeas (garbanzo beans) and stir well.
  6. Bring the mixture to a boil, then reduce the heat to a rolling simmer for 15 minutes, partially covering.
  7. Remove the cover, and add noodles.
  8. Turn up the heat slightly so the noodles boil on medium-high, and cook for an additional 4 minutes (or the length of time your noodles require).
  9. Turn off the heat.
  10. Stir in Tamari, tahini, maple syrup, and salt to taste.
  11. Taste the soup and adjust seasonings as needed. Make it just right for you.

  • Use a 15 oz can of chickpeas or about 1 1/2 cups
